The other night Todd & Lboy were hanging out in the kitchen while I was cooking supper. I was finishing up & making mashed potatoes. Todd was stealing bites while I was stirring them & he said he was so glad that I didn’t make them lumpy, in fact I think he said, “I don’t think I could be married to a woman who made lumpy mashed potatoes. You know that would be a definite deal breaker.”
From that conversation we went on to other things about what we like to eat, the meals he likes, & his incapacity to make a grilled cheese. And then Todd said, “I’m so impressed with how you’re a fancy cook.”
*blank stares* *nervous laughter* *more blank stares*
See, I have a confession to make. When Todd & I were first married I cooked EVERYTHING from scratch. From pancakes, to mashed potatoes, to brownies, to banana nut muffins, to fettucini alfredo…and I’m pretty sure he still thinks I cook that way.
But these days…I’m spending all my time wiping a little nose & changing diapers, while cleaning up toys & well let’s all be honest, blogging, so…all my cooking is done from a box…but please don’t tell Todd. I quite like that Fancy Cook Status.

Years ago, when our kiddos were younger, I cooked everything from scratch! After 5 or so years of that, I tried my first box of Hamburger Helper…it was a big hit! The kids were excited to be eating things their friends were eating! After that, I didn't cook from scratch as much, until my kids grew up and started watching me cook…needless to say, I'm back to cooking everything from scratch again!

Man, I'm missing Bisquick already! I made mashed potatoes the other night from scratch (no Betty Crocker mix here)…and it'll be better once my Kitchenaid mixer gets here! But the kids liked them. Josh was happy. That's all that matters, right?

I cook 7 nights a week & it just gets old fast. But when you're on a budget, it's just better to cook than to go out every night.
Last night I did half scratch & half box. lol And guess what…we survived & Todd loved it! lol

I am not a very good cook but thankfully my husband is. I will gladly do the dishes everynight while he cooks. The only thing I am good at making is dessert and pouring wine.

How does your husband feel about reheated things? Freezer meals are AWESOME… Freeze 2 or 3 meals ever time you cook, and after a while you can have something different every night but only cook a couple times a week.
