As Lboy gets older, I’ve been trying to think of meals that easy to make & a lot of fun to eat! I thought I’d share one my favorites that I’ve been making for him in the afternoons for lunch or for supper!
Pita Bread Pizzas!
Need:
As many pita breads as you plan on cooking for people
Mozzarella Cheese
Your favorite pizza or pasta sauce
Olive Oil (not really necessary, only if you have it)
Don’t forget toppings! (We’ve been doing grilled chicken, pepperoni, turkey burger)
To do:
Preheat oven to 400-450 degrees
Cover both sides of your pita break with Olive Oil, put on your pizza sauce (cover it as much or as little as you would like), sprinkle on however much mozzarella cheese you want, & then add your toppings!
Bake in oven for 10 minutes (if you want them crispy or less crispy adjust the time-the more time the crispier!)
And voila! You have pizza!
To add a little extra to it, try this recipe from The Family Dinner Book–I’m crazy about this book!
You will need:
2 heads romaine lettuce, inner leaves best, torn into bite size pieces
Bunch of croutons
1/2 Parmesan cheese
Caesar Salad dressing (or you can make your own-Good luck with that! :))
Super fun, super easy, & the kids always love it!
Mix your lettuce & croutons with your dressing to your liking & place on pizza, sprinkle with Parmesan Cheese! YUM!
Gotta have dessert right?!
One of the favorites in our house is the classic Mud Pudding!
Go to your local grocery store & buy regular size box of instant chocolate pudding & follow the directions on the box.
Once that is done, take a 12 oz. bowl of whipped cream & stir it in with the pudding.
Then crush up a row of Oreos & mix it in with the pudding/whipped cream.
Place in a bowl (or fun plastic cups-layer pudding on top of Oreos & repeat in a clear cup or bowl for the Mud effect), sprinkle some Oreos on top & then place a couple of gummy worms!
(This can also be a lowfat dessert for grown-ups too! Buy the light pudding, use skim milk, light whipped cream & low fat Oreos!)
And there is your FUN, EASY summer time meal that will take all of 15 minutes to make (if that!)

We make pizza similar to this but we use Naan bread. It’s delicious. Takes about 5 minutes to bake and my kids love it.

This recipe is great for Halloween. Like for a class party or any Halloween party you are having. I garantee you will love this recipe. I have never really made it but it looks super good.
